- Qualho cheese1 kg
- Qualho cheese1/2 kg
- Granulated tapioca flour1 kg
- Whole milk1 kg
- Cheese of your choice300 g
- Sour cream200 ml
- Guava Jam350 g
- Water200 ml
- Heat the milk until it almost boils (but don't let it boil, just get very hot)
- Grate the qualho cheese and mix it with the granulated tapioca flour
- TIP: If you prefer to add grated pepperoni, add half the cheese and half the pepperoni
- Add the milk to the dry mixture until the granules hydrate and get a homogeneous mixture.
- Mold into a shape so that it is straight, and keep it in the fridge for 2 hours.
- After this period, with the firm and gelatinous mass, cut the dice or in the shape you wish Fry in hot oil 150°C
- Add the cheese of your choice to a pan with cream (200 ml) and whole milk (50 ml) until it becomes a liquid, set aside and place in the fridge for 30 minutes.
- After 30 minutes, beat this cheese liquid until it turns into a cream (cheese emulsion).
- Place the guava paste with a little water in a pan over low heat until it becomes a liquid guava paste.
- On a plate, place the liquid guava paste and the cheese emulsion on top and distribute the already fried dice on top and good appetite
