- Sugar80 g
- Yeast6 g

- Place the butter and sugar in a mixer and beat just until the sugar is incorporated.
- Then add the other ingredients, the yolks, yeast and flour.
- Leave on speed 2 of the mixer, and let everything be very uniform. This process is fast, the dough is deducted from the hand.
- Remove from the mixer and form a ball and place in the fridge for at least 20 minutes.
- Then put flour on a bench and open it with a rolling pin to the desired thickness. Preheat the oven to 170°.
- Arrange the dough in a square shape with parchment paper and bake for about 17/20 minutes. As soon as it is removed from the oven, it can be cut into the desired shape while it is still hot.
- It can be square , with the same cookie molds . Then let it cool and they are super crispy. In the photo I made it with lemon curd and mint filling.
