Salted caramel pie with white chocolate

- Oat flakes150 g

- Coconut oil50 g

- Vegetable coconut milk240 ml
- Demerara sugar150 g
- Pinch of Salt1/2 coffee spoon
- Sugar-free white chocolate bar120 g
- Coconut oil15 g
- White chocolate chips to taste
- Fleur de sel to taste
- Rawl dough Blend the almonds, rolled oats, dates, molasses, coconut oil, grated coconut and a pinch of salt in a food processor until smooth. Cut a butter paper in the shape of the removable form that will be used and put it on the bottom of that form (not sides!). Place the dough in the bottom of the mold and press well to make it firm. Place in the freezer while you prepare the filling and topping.
- salted caramel Place coconut milk, sugar, pinch of salt in a small pan and bring to a boil. Let the liquid reduce and thicken until it resembles the consistency of soft dulce de leche. When it reaches this consistency, turn off the heat and let it cool down a bit. Then put it over the pie crust. This is salted caramel.
- Roof Melt the 120g of white chocolate in a bain-marie and place on top of the salted caramel in the pie. Decorate with white chocolate chips and sprinkle a little fleur de sel on top to finish. Place in the fridge until serving time.
