- Raw Cashew Nuts100 g

- White raisins50 g
- Black raisins50 g
- Nuts100 g
- Black raisins to make the “eyes”5 unit(s)
- Soak the walnuts, cashews, white raisins and black raisins in water separately for 30 min.
- Discard the hydration water from the walnuts and black raisins
- Beat the walnuts and black raisins without the hydration water in the blade S processor until it forms a moldable mass
- Make 10 little balls the size of the base of the strawberries and then knead to be in the shape of a coin
- Discard the hydration water from the chestnuts and blend in a blender with the raisins and the juice of 1/2 a lemon. If necessary, add a little raisin hydration water to obtain a smooth and firm cream.
- Mounting
- Cut the tops off the strawberries, halfway up to form Santa's "hat"
- Cut the base of the strawberries so that they can stand upright.
- Place each bottom part of the strawberries on top of the walnut base.
- Stuff each one with the chestnut cream
- Put on the “hat”
- Place the cream on the tip of each “hat”
- Make the “mouth” of each one with the chestnut cream
- Cut the reserved raisins into small pieces to make the eyes and assemble as in the photo. Now put it on a pretty platter and you're done! Merry Christmas!
