- Zest of lemon or orange. to taste
- In a stand mixer, beat the egg whites for 8 minutes. Still beating, gradually add the sugar and continue beating until glossy and firm. At this point, if desired, add lemon or orange zest.
- Transfer to a pastry bag with a pitanga nozzle and, on a baking sheet lined with parchment paper, shape small mounds, pulling at the tip to make a little bit.
- Bake in a medium-low oven (160ºC) for about 15 minutes or until dry and lightly golden underneath. Let cool.
