- In a stand mixer, beat the egg whites for about 8 minutes.
- Then add the sugar little by little and continue beating until glossy and firm.
- It is at this time, if desired, add lemon zest.
- Transfer to a pastry bag or (freezer bag) cutting off the tip and, on a baking sheet lined with parchment paper, shape small mounds, or as you prefer.
- Bake in a medium oven (160ºC) for about 15 minutes or until dry and lightly golden underneath. Wait for it to cool and it's ready.
