- Mix the sugar in the whites
- Heat it up a bit to break up the sugar. It can be in a bain-marie or microwave for 2 or 3 minutes
- Place in a stand mixer and beat until firm.
- If you're going to use it for meringue, put it on parchment paper and leave it on low until it's firm.
