- First, beat the egg whites and set aside. Then pass the yolks through a sieve and beat with the sugar and butter until it forms a fluffy cream (it can be by hand, it's very quick). Pour in the milk and mix. In this part I changed a little bit: I added the chocolate first and mixed it well. Then I added the flour little by little and stirred gently with a fouet (wire whisk) until the ingredients were mixed. Now gently add the snow whites and mix. Finally add the yeast and stir just until incorporated.
- Just mix the 3 ingredients and take it to the low fire, stirring constantly. Wait for it to boil (it takes a little while, ok?) and leave it for another 7 minutes, stirring constantly so that everything doesn't stick. Finally, let it cool and make a filling or icing on the cake – or both.
