- Wheat flour300 g
- unsalted butter150 g

- Corn starch50 g
- Whole milk500 ml
- Vanilla bean1 unit(s)
- Strawberry3 cup

- PASTA In a bowl, mix with your fingertips, the flour and butter until you form a wet crumb. Then add the salt, egg and sugar, mixing just until you get a uniform mass. Shape the dough into a ball, cover with plastic wrap and place in the fridge to rest for 30 minutes. Then, between two plastics, open the dough with a rolling pin. Carefully place the dough on a baking sheet, poke holes in the dough with a fork, cover it with parchment paper, then with beans (to make weight and the dough does not inflate) and bake in a preheated oven at 180°C. for 30 minutes. Remove from oven and reserve.
- CREAM In a pan, add the milk. Open the vanilla bean with the tip of a knife and remove the seeds. Take them to the milk. Turn on the heat and heat the milk until it boils, then turn it off. Add the yolks in a bowl, add the sugar and beat immediately with a whisk until they are white. Add the starch and beat again. Using a ladle, add the hot milk to the yolk mixture, stirring constantly. After adding all the milk, return the mixture to the pan and cook, stirring constantly, until the cream thickens.
- MOUNTING With the dough already cold, add the patisserie cream (also cold) and add the strawberries (washed and cut into slices), until the entire pie is covered.
