- Natural yogurt2 tablespoon
- Oat bran2 tablespoon
- Natural unsweetened shredded coconut1 tablespoon
- Baking powder1 coffee spoon
- Peanut Butter2 tablespoon
- Vanilla flavored whey protein2 tablespoon
- Green Grapes to taste
- Place the egg in a small bowl and beat well until foamy (with a fork or fouet)
- Add the plain yogurt and beat again.
- Add the oat bran, grated coconut and mix well until a dough forms.
- Finally add the baking powder and mix gently.
- Transfer to a small, tall, microwave-safe bowl.
- Bake in the microwave for 2 minutes and 30 seconds
- Allow to cool completely and unmold.
- Cut in half and make the filling:
- Mix peanut butter with whey protein
- Put half of this cream inside the cupcake and add some green grapes cut in half
- Close the cookie and cover with the other half of the protein cream.
- Decorate with the green grapes cut in half and it's ready 😋
- Tip: If you want your cupcake to be sweeter, add 1 tablespoon of xylitol sweetener when preparing the dough 😉
