- Raisin sultana (white)1 cup
- Juice and zest of 1/2 lemon1/2 unit(s)

- Milk (1 and 3/4 cups)420 ml
- Flour (2 and 1/2 cups)320 g
- Oat bran100 g
- Vanilla essence1 teaspoon
- Yeast2 teaspoon
- Cinnamon powder1 tablespoon
- Butter200 g
- Baking pan and cupcake liners to taste
- Chop the apple into very small cubes.
- In a bowl, mix the fruits and cinnamon and let it rest for 1 hour.
- In the mixer, put the butter to beat until it gets fluffy and aerated.
- Add the fruit and beat until well blended.
- Add the eggs one at a time, hoping to incorporate well before adding the next one.
- Add the milk and vanilla essence, mix well and turn off the mixer.
- Gradually add the yeast and flour and mix with a spatula gently until incorporated.
- With the help of a spoon or ice cream scoop, distribute the dough in the molds (fill about 3/4 of the molds so that the muffin doesn't leak or get too low).
- Bake in a preheated oven at about 160 degrees for about 30 minutes.
- Tip: This is a great option for children's lunch box. You can make a batch (which yields about 30 units), portion them in individual freezer bags (take out all the air inside) and keep in the freezer for up to 3 months. Then, just take it out of the freezer and leave it in the fridge the night before and have a healthy and delicious snack in your lunch box.
