- Whole Grain Rice1/2 cup
- Water2 cup
- Cinnamon stick1 unit(s)
- Cinnamon powder1 teaspoon
- Lemon1 unit(s)
- Coconut Milk1 cup
- Demerara Sugar1/2 cup
- Let the rice soak for 24 hours, changing the water once during this period.
- Bring the rice, sugar, cinnamon stick to low heat and cook on low heat until the water is reduced, without drying out, stirring occasionally.
- Add the coconut milk and continue cooking, stirring, until the rice is very soft. If necessary, add more water. When the rice is soft and well soaked, turn it off.
- Let it cool down a bit and add juice of 1/2 lemon and lemon zest. Mix
- Transfer to a bowl and sprinkle with ground cinnamon. Is ready!!!
