- Amaretto4 tablespoon
- Icing sugar150 g
- Grated semisweet chocolate50 g
- Mascarpone500 g
- Fresh cream200 ml
- Strong espresso400 ml
- Champagne cracker350 g
- Cocoa powder to finish0 to taste
- Make a strong espresso, add the amaretto and set aside.
- Beat the yolks in the mixer for two minutes and add the sugar - and beat until you get a whitish mixture.
- Add the mascarpone cheese and beat until smooth. Reserve
- Whip the fresh cream to the point of firm chantilly.
- Mix the whipped cream with the mascarpone cream using a spatula in a very delicate way.
- Start assembling the dessert on a platter by dipping the biscuits in coffee and layering the biscuits, cream and grated chocolate until you finish with cream.
- Sprinkle with cocoa and refrigerate for at least 2 hours before serving.
