- Egg white200 g
- Fresh cream240 g
- Champagne biscuit300 g
- Semisweet Chocolate50 g
- Espresso300 ml
- Cocoa Liqueur/Marula/Amaretto30 ml

- Let's start by making the Swiss meringue. Beat the egg white a little and add 100g of sugar, take it to the Mari bath and beat until it reaches a hard peak.
- Beat the egg yolks with 100 grams of sugar and your liqueur, beat until fluffy. Beat the cold cream until it reaches the point of chantilly, mix all the creams with the mascarpone and take it to the fridge to rest for at least 3 hours.
- Soak the biscuits in coffee on one side only and start assembling them on the platter. One layer of biscuits, one layer of cream, another layer of biscuits and another layer of cream. Finish by scraping the dark chocolate over the top.
- Leave another 12 hours in the fridge and you can serve.
