- Separate the egg whites from the yolks.
- Beat the egg yolks with the sugar until you get a fluffy cream.
- Add the mascarpone cheese and mix well.
- Beat the egg whites and gently fold them into the cheese mixture.
- Mix the coffee with the rum in a bowl.
- In a container, place a layer of cookies soaked in coffee.
- Cover with a generous layer of cream cheese.
- Repeat the layers until finishing with the cream cheese.
- Refrigerate for at least 3 hours.
- Before serving, sprinkle cocoa powder on top.
