- Crystal sugar100 g
- Corn Glucose120 g
- Water60 g
- Vanilla essence5 g
- Pinch of salt1 g
- Unflavored gelatin12 g
- Water to hydrate the gelatin60 g
- powdered sugar for breading to taste
- Unite a form of +- 20x10 with vegetable or coconut oil and set aside. Hydrate the gelatin with the 60g of water, and set aside.
- In a pan, bring to the fire (medium to low) the first 5 ingredients. Let it reach 110°C, turn it off and put it in the mixer. Beat on medium speed, add the hydrated gelatin (put it in the microwave for 30sec to melt). Whisk the mixture until pale and sticky.
- Place in greased shape and set aside at room temperature for at least 2 hours before cutting. Remove from the form, and always coat all sides with powdered sugar. Tip: Cut with an oiled knife. To store, use a well-sealed pot or bowl.
