- Canned coconut milk400 ml
- plant milk600 ml
- Corn starch4 tablespoon
- Refined sugar115 g
- Vanilla essence1 tablespoon
- Raspberry paste50 g
- Chopped Strawberries40 g
- Whole Raspberries40 g
- Blackberry40 g
- In a pan, place the coconut milk and vanilla and bring to the fire until it boils.
- Meanwhile, in a bowl, mix the starch with the chosen plant milk and sugar. Add this mixture to the pan and stir until it thickens.
- Transfer the mixture to a container that can be refrigerated, with the frosting in contact with the cream to create a film. Let cool for at least 4 hours.
- Remove the mixture from the fridge, add the raspberry paste and place in your ice cream maker for approximately 15 minutes.
- Take it out of the ice cream maker, add the fruits, mix well and enjoy! For a firmer texture, store longer in the freezer.
- Tip! Take the ice cream out of the freezer 10 minutes before eating for a creamier texture ;)
