- Cashew Nuts100 g
- Sugar1/2 cup
- Pinch of salt1 unit(s)
- Vanilla essence1/2 teaspoon
- Water1 cup
- Water1/2 cup
- Soak the chestnut for 6 hours or for 30 minutes in hot water.
- Drain the chestnuts with 1 and 1/2 cup of water until there are no pieces and turn into chestnut milk.
- Put the sugar in the pan and stir until it turns caramel (over low heat), be careful not to burn
- When all the sugar has melted, add some of the chestnut milk, stir (here it looks like everything is going to go wrong, persist hahahah), add the rest of the milk
- Now keep stirring for our jam to be well cooked and reduce (on average 15/30 minutes) Turn off the heat, add the pinch of salt and the vanilla essence.
- Now you can use the mixer or the whisk and beat the dulce de leche well, this will leave it with a more sandy texture
- Okay, see how simple it is? Now just keep it in the fridge
