- Wheat Flour200 g
- Demerara Sugar180 g
- Water180 ml
- Vegetable oil75 ml
- Ginger Powder2 g
- Cinnamon powder3 g
- Cardamom3 g
- Baking powder7 g
- Roasted Almonds15 g
- Brazil Nuts15 g
- Cherry in syrup10 g
- Candied fruit15 g
- Rum40 ml
- Icing sugar40 g
- Lemon1/2 unit(s)
- Place the nuts and fruits in a pot and pour the rum. Leave at least 10 minutes for them to soak and release more flavor.
- In a bowl place the water, sugar, oil and spices. Mix well.
- Gradually add the flour, leaving approximately 20 g, separated for later use.
- Put the yeast and mix.
- Pass the fruit and nut mixture through a sieve. The liquid you put in the dough mixture.
- The fruits and nuts you reserve the mixture with that reserved wheat flour.
- Preheat the oven to 160 degrees Celsius.
- In a greased shape of approximately 20 cm in diameter (can be a hole in the middle or English cake) pour the dough and then the fruit mixture. Stir gently to spread them out.
- Bake for approximately 40 minutes or until the toothpick test comes out clean.
- With the cake already cold, mix the icing sugar with the lemon, little by little. Pour over the cake and if you want add fruits and nuts to decorate.
