Walnut Cameo with Chestnut đđŸ

- Can of condensed milk (lady)1 unit(s)
- Butter1 tablespoon
- Egg Yolks2 unit(s)
- Ground walnuts150 g
- Chocolate 70%200 g
- Brazil Nut to taste
- Powdered milk to sprinkle on top of the cameos to taste
- In a pan add condensed milk, butter and sifted egg yolks
- Stir until you disgrace from the bottom of the pan.
- Put the ground walnuts and mix well, turn off the heat.
- Wait for it to cool completely and with your hands shape it into a cameo shape.
- Melt the chocolate in the microwave every 30 seconds
- Melt the chocolate until it reaches a temperature of 45 degrees
- With a spatula stir the chocolate until it melts completely.
- The chocolate must reach a temperature of 31 degrees
- Now that you've tempered the chocolate, you can dip your cameos in that chocolate until everything is covered on both sides
- Line a baking sheet with cling film and place the cameos on top.
- Decorate with chopped chestnuts and use a pastry bag to make chocolate designs on top of the chestnuts.
- Put it in the fridge for about 15 minutes
- unmold carefully
- Sprinkle powdered milk on top or place your cameos in decorative wrappers
- Tip: if you don't have a thermometer put a small amount of melted chocolate on your wrist and when you feel like a cold spoon it means you've tempered the chocolate
- This tempered chocolate starts to dry in about 3 to 5 minutes so don't take too long to dip your cameos in the chocolate đ
- If you don't have the patience to temper the chocolate, you can use chocolate fondant or just melt it in the microwave and dip the cameos directly into the chocolate.
