- Lemon zest to taste
- Butter200 g
- TO THE MASS Whisk the yolks (peinerated) until you get a light cream. Then add the sugar and vanilla beating for another 10 minutes. Add the flour, starch and yeast in small increments and beat. Add a little of the beaten egg whites to make the dough better. Gently add, with the help of a spatula, the rest of the egg whites so that the dough does not lose volume.
- Place on a greased and floured baking sheet lined with parchment paper.
- After the discs are baked, sprinkle flour on top of them with a sieve.
- FOR EL LEMON CURD
- Remove the zest and juice from the lemons. Bring the lemon zest, juice, egg (100) yolks (100) and sugar (270) to a low heat.
- Mix until creamy
- add cold butter
- After the curd has cooled down a bit, store the jar in the fridge.
- Assemble the well-married ones and decorate with neat packaging
