- from plain yogurt (we use Natural Lacbacillus)2/3 cup
- Organic Demerara Sugar1 cup
- oil of your choice (I used corn)1/3 cup
- rice flour1/2 cup
- almond flour1/2 cup
- sweet sprinkle1/4 cup
- potato starch1 tablespoon
- baking powder1 tablespoon
- xanthan gum1/2 teaspoon
- 📍Topping:. l
- fresh cream1 can(s)
- Tahiti lemons2 unit(s)
- Zest of 1 lemon. to taste
- Pre heat the oven to 180°C.
- Place the sugar in a blender and blend on high speed until smooth.
- Add the eggs, oil and yogurt and beat until it becomes a homogeneous mass.
- In a bowl, mix all the dry ingredients except the yeast.
- Mix the liquid with the dry with a spatula until a homogeneous mass is formed.
- Add the yeast and mix.
- Grease a round shape with a hole, put the dough and bake for 25-30 min (time varies from oven to oven so keep an eye on it and do the toothpick test to see if it's done).
- 📍 Coverage: Mix the cream with the lemon juice, sugar and let it rest in the fridge covered with plastic wrap for at least 30min.
- Remove the cake from the oven, wait a few minutes to unmold, put the frosting and finish with the lemon zest.
