- Crystal sugar1 cup
- Vegetable oil1/2 cup
- Plant milk (or milk)1/2 cup
- Almond (or oat) flour1 cup
- Wheat flour2 cup
- Cinnamon powder1/2 tablespoon
- Baking powder1 tablespoon
- Start by grating the zucchini without the core and seeds. Spread on a flat surface on top of a paper towel. Also place paper towel on top and press lightly to remove excess water. Let it rest while you make the rest of the dough, but change the top paper towel whenever it gets too wet.
- In a bowl, whisk together the eggs, milk, oil and sugar until combined. Add the flours and mix well again until you get a homogeneous mass.
- Add the cinnamon, the dried zucchini and the yeast, stir lightly just to incorporate.
- Take it to a large bread pan, greased with oil or butter and wheat flour and bake in a preheated oven (200°) for 30 minutes (do the toothpick test).
- Allow to cool for 30 minutes before unmolding and it's ready, enjoy!
