- Honey (can use demerara or brown sugar)3 tablespoon
- Oat flakes (can be without flakes)2 cup
- Wholemeal flour approx.5 cup
- Warm milk of your choice (I used almond)320 ml
- Olive oil (coconut oil, sunflower oil)80 ml
- Warm water320 ml
- Organic Dry Yeast10 g
- Raisins (optional) You can use chestnuts and other dried fruits of your choice (I used 100 grams of raisins in my bread) yields two large loaves.
- Lightly beat the eggs with a fork, add the water, the oil, my milk and the yeast and mix well.
- Then put the oatmeal, salt and wholemeal flour gradually until it unglued from your hands, be careful not to make it too hard, rise for 10 minutes, let it rest for 20 minutes.
- Divide dough into two parts, place the raisin or whatever you prefer, top the dough until you mix the fruit and roll it up and place it on the baking sheet (preferably modeling and baking form).
- Let it rest for approximately 40 minutes and then oven at 180° for approximately 30 minutes.
