- grated parmesan cheese100 g
- Cook the shredded cauliflower in water and salt until very wet.
- Drain a lot and put it straight in the refractory where it will go to the oven.
- Mix in the butter and set aside.
- Beat the two egg whites until stiff.
- Mix the egg yolks with a wooden spoon or spatula, then the cream and Parmesan cheese.
- Reserve some cheese to cover.
- Mix everything slowly with the spatula or wooden spoon until all the cauliflower is well coated.
- Cover well with the grated cheese.
- Bake in a preheated oven for 10 to 15 minutes at 200°C until golden.
