Chicken croquette with sweet potato

- Sweet Potato250 g
- Oat bran1/3 cup
- Lemon pepper1 teaspoon
- Onion powder1 teaspoon
- Salt to taste
- Chicken250 g
- Cumin1 teaspoon
- Crushed garlic1 tablespoon
- Chives to taste
- Tomato sauce2 tablespoon
- Water200 g
- Egg4 unit(s)
- Cook the sweet potato;
- Mash the sweet potato;
- Add lemon pepper and onion powder (or whatever seasoning you prefer), oat bran and salt;
- Season the chicken with cumin, garlic, salt, chives and homemade tomato sauce;
- Sauté the chicken in olive oil, add water and cook until it starts to shred (I usually use the pressure cooker);
- Shred the chicken and if necessary, add a little water and let it boil so that it is slightly wet;
- Mix the potato and chicken;
- Form a ball;
- Dip the ball in the beaten egg and then in the oatmeal to coat;
- Give a slight round again to maintain the shape;
- Place on a baking sheet;
- Place in the oven and bake until golden.
