- Escarole1/2 unit(s)
- Cottage cheese2 tablespoon
- Olive oil1 tablespoon
- Salt to taste
- Chimichurri to taste
- Sweet paprika to taste
- Garlic1 unit(s)
- Heat a drizzle of oil in a pan and add 1 crushed garlic clove. Leave it until it starts to brown.
- Add the chopped escarole and let it cook until wilted. Let cool.
- Transfer to a bowl (draining off excess liquid) and mix with the cottage cheese. Reserve.
- Beat the chicken fillets to make them thinner. Season with salt, paprika and chimichurri.
- Stuff the fillets with the escarole and cottage mixture and roll up (as in the video). Secure with toothpicks.
- Place on a greased baking sheet and drizzle with a drizzle of olive oil.
- Bake in the oven or airfryer until golden!
