- Almond flour1 cup
- White coconut flour1/4 cup
- Coconut milk1/3 cup
- Cocoa powder2 tablespoon
- Sweetener3 tablespoon
- Coconut oil1/4 teaspoon
- Yeast powder1 teaspoon
- Vanilla Extract1 teaspoon
- Vanilla Extract1/2 teaspoon
- Salt1/4 teaspoon
- In a large bowl, whisk together all ingredients except yeast;
- Beat everything very well, then add the yeast and mix gently. The dough should have a typical pancake batter. If it gets too thick, add a little more milk. Don't add too much, or the pancakes will be too \\\"wet\\\" and fall apart;
- Preheat a nonstick skillet over low heat;
- Put some ghee or coconut oil in the bottom of the skillet;
- Carefully with the help of a small ladle, pour some of the batter in the center of the pancake forming small circles;
- Cover and let brown for about 1 to 2 minutes, or until bubbles begin to form.
- Flip and cook on the other side for another 1 to 2 minutes.
- Repeat with the rest of the dough;
- Make some pancake towers and serve.
