- 1/2 cup red/yellow peppers .1/2 cup cherry tomatoes. 1/2 cup diced red onion, I soaked it for a few minutes in warm water to remove the burning, 400g of tofu or the protein you like best. 1/2 cup cubed zucchini , and seasonings to taste , I used salt , black pepper ( a Middle Eastern seasoning reminiscent of paprika with lemon ) and virgin olive oil to taste
- PREPARATION MODE Season all the vegetables and the protein with the seasonings (I like to spread it all out on a large board/bowl to make it easier; Take the wooden skewer and put 2 vegetables for 1 serving of protein; Heat a frying pan and grill the skewers for 3 minutes on each side (except the fish, which can be 2 minutes on each side); Serve with a nice green salad to assemble a nice STC meal platter. YIELD This recipe yields 2 servings of protein and vegetables, but it should be accompanied by a nice green salad as a main meal. You can also use 1/4 of this recipe as a healthy snack.
