- quinoa grains1 cup
- Diced Tomatoes1 unit(s)
- Cucumber diced1 unit(s)
- Salt, lemon, chives to taste
- Lettuce to taste
- Olive1/2 cup
- Place the quinoa in a pan with 2 cups of boiling water and leave for about 10 minutes. Drain and let cool.
- In a bowl mix the quinoa, tomato, cucumber, olives, pepper, salt, olive oil, chives and lemon. Line the lettuce leaves in a salad bowl and pour the mixture on top.
