- Cooked and shredded chicken breast1 unit(s)
- Salt, olive oil, parsley, pepper to taste
- Onion1/2 unit(s)
- Tomato Extract2 tablespoon
- Garlic Cloves2 unit(s)
- Cottage cheese4 tablespoon
- Oregano1 teaspoon
- Cheese for gratin to taste
- Place the sanitized whole zucchinis in a pan with boiling salted water and let it cook for 5 minutes, remove the zucchinis from the pan. After they cool, cut them in half and remove the core so that they are in the shape of a "boat". Reserve.
- Now put a thread of olive oil in a frying pan, let the onion and garlic sauté, put the shredded chicken and the extract and mix well. Turn off the heat and add the cottage cheese, oregano and parsley, mix very well and set aside.
- Stuff each half of the zucchini with the chicken filling and top with cheese.
- Place the zucchini on a greased baking sheet and bake in a preheated oven at 190º for around 20 minutes or until golden.
