- Medium eggplant sliced 1cm thick2 unit(s)
- Homemade Bolognese Sauce2 cup
- Mashed ricotta6 tablespoon
- shredded mozzarella cheese to taste
- Olive oil1 tablespoon
- Grill the eggplant slices on both sides in a nonstick skillet greased with olive oil. Reserve.
- In a roast, have a little of the bolognese sauce on the bottom, cover with the eggplant slices.
- Add sauce on top to cover, sprinkle the mashed ricotta and add another layer of eggplant.
- Continue the process of alternating the sauce and eggplant until finished and finish the top layer with sauce and grated mozzarella cheese.
- Place in a preheated oven at 200ÂșC to bake for about 15 minutes.
