- Ham300 g
- Mozzarella300 g
- Tomato sauce500 ml
- Grated Parmesan to taste
- Vinegar150 ml
- Red wine150 ml
- Parsley to taste
- Onion1 unit(s)
- Garlic Cloves3 unit(s)
- Salt to taste
- Black pepper to taste
- Cut the eggplants lengthwise and soak in the vinegar for 20 minutes to remove the bitterness.
- Make the tomato sauce with onion, garlic, basil, red wine, parsley, salt and pepper
- Put some of the sauce on the platter and lay out a layer of eggplants.
- Make a layer of ham and cheese, alternating with more sauce and eggplant.
- On top, put more sauce and grated cheese.
- Bake in the oven at medium-high temperature for about 20 minutes or until the eggplant is very soft.
