- 500 grams of ground beef 4 ripe tomatoes 4 per eggplant 3 strands of olive oil 1 pinch of Salt 1 pinch of light black pepper 200 grams of light curd1 to taste
- Cook the eggplant in a skillet with a little oil until golden and tender. Remove to a plate and, in the same skillet, cook the meat with a little of the tomato sauce (reserve the remaining puree to assemble
- When the meat is cooked, assemble the eggplant lasagna as follows on a greased baking sheet: place a layer of eggplant, a layer of cheese, a layer and a layer of meat. Repeat ending with eggplant, tomato sauce and cheese.
- Take your light lasagna to the oven preheated to 180ºC for about 45 minutes. So that it doesn't get dry or burn on the top, you can cut the time in half and add more cheese in the last few minutes.
