- Tomato sauce2 cup
- Hot water1/2 cup
- Chopped Sausage1/3 cup
- Chopped Onion1/2 cup
- Salt to taste
- Ground black pepper to taste
- Chopped green onion to taste
- In a high skillet fry the sausage well (discard the excess fat).
- Add the onion and sauté. Add tomato sauce, water and salt. Mix and let cook for 5 minutes.
- Crack 1 egg at a time into a separate container and place into the sauce.
- Season the eggs with salt and pepper and cover the skillet.
- Let it cook for about 5 minutes, finish with the chives and serve immediately with white rice.
