- Italian Zucchini2 unit(s)
- Boiled Egg4 unit(s)
- Extra Virgin Olive Oil to taste
- Salt to taste
- Lemon Pepper2 teaspoon
- Sicilian lemon juice2 tablespoon
- Oregano to taste
- Sicilian lemon zest to taste
- With the spaghetti or grater pass the zucchinis until you form the spaghetti-like pasta (thin and long strips)
- If using the grater, pass the zucchinis horizontally to form thin, long strips 😉
- In a small pan, put a drizzle of olive oil and add the zucchini noodles.
- Season with salt, oregano and lemon pepper
- Add the lemon juice and let it cook for about 5 minutes.
- Taste and adjust the salt if necessary and if the consistency is Al dente, turn off the heat.
- Serve with halved or sliced hard-boiled eggs.
- Put a little salt in the eggs and olive oil
