- Demerara or brown sugar1 cup
- Olive oil or oil120 ml
- Coconut milk or water120 ml
- Rice flour2 cup
- Baking soda1 teaspoon
- Chemical Yeast1 teaspoon
- Cinnamon powder to taste
- Grease a baking sheet, set aside.
- Blend all the ingredients, except the baking powder and bicarbonate, in a blender until smooth.
- Add the yeast and bicarbonate of soda and mix carefully.
- Place the dough on the greased baking sheet, sprinkle sugar on top.
- Bake in a preheated oven at 180° for 35 minutes or until the cake is inserted with a toothpick and it comes out clean.
- Wait for it to cool and unmold. Enjoy your food!
