- Mashed Boiled Sweet Potato80 g
- Rice flour220 g
- Sweet sprinkle170 g
- Golden flaxseed flour15 g
- Salt1 teaspoon
- Organic Yeast7 g
- Warm water (for yeast)2 tablespoon
- Demerara sugar (for the yeast)1 teaspoon
- Activate the yeast, mixing it with the water and sugar, setting aside until it starts to foam (about 5 - 10 min)
- Meanwhile, lightly beat the eggs, the oil and the potato (which is already in the form of a puree)
- Add the yeast foam to the eggs.
- In a separate bowl, mix the other dry ingredients.
- Gradually add the dry ingredients to the wet ones (it is important to be gradually to feel the point - you can ask for more or less flour).
- Knead until the dough comes away from your fingers and let it rest for 10 minutes.
- Roll out onto parchment paper or silicone mat and, using a glass or bowl, cut the middle of the dough, removing that part, so that it forms a garland.
- Take it to pre-bake in a preheated oven at 180ºC with the tomato sauce of your choice, for about 10 min.
- Then add the other toppings you prefer. I put buffalo mozzarella cheese, lightly cooked broccoli, cherry tomatoes, hearts of palm and oregano and took it to finish cooking for 15min.
- To add the decorative touch of a wreath, you can use a bow made of ribbon or cut a red bell pepper in thin lines to shape the bow (as I did).
