- Demerara sugar5 g
- Warm water50 ml
- Boiling water100 ml
- Turn the oven to 180 degrees to preheat while preparing the pizza. Pre-fermentation is also required. Mix the yeast and sugar in a bowl. The sugar will have the function of activating the yeast. Add 50ml of warm water and stir until a homogeneous cream is obtained. Let it rest in a dark place for 10 minutes for the yeast to act. Meanwhile, in another bowl, place all the dry ingredients and mix. Pour 100ml of boiling water and stir well. Separately mix the eggs with the vinegar and then add the dough. Mix until homogenized. Then add the yeast foam and mix until uniform. Cover with a cloth and let it rest for 10 minutes. On a bench, line with cling film, flour with coconut flour and flaxseed flour, place the dough, cover with cling film and roll out the dough with the help of a rolling pin to the desired shape. Place on a plate lined with dover paper and bake in the oven for 20 minutes. After this time, remove and add the tomato sauce and fill as you prefer. Bake in the oven for another 15 minutes and you're done.
