- Sweetener4 tablespoon
- Vanilla essence1 tablespoon
- Cold butter50 g
- Xanthan Gum1 teaspoon
- coconut flour or almonds to make the dough1/2 cup
- Chocolate squares (I used 90% cocoa)4 unit(s)
- Mix the almond flour, sweetener and salt in a bowl and place in the center of this flour, the skinless yolk, the essence and the cold butter.
- Knead with your hand until the dough is completely incorporated and "sticky", add the xanthan gum and mix well.
- Now add that reserve of flour until you get a point and the dough comes off your hands and the bowl.
- Roll out the dough between 2 silicone mats or between parchment paper, cut into circles with a cutter or the mouth of a glass.
- Transfer to a baking sheet lined with parchment paper and bake in a preheated oven at 180° for 10 minutes, just until lightly golden. Wait to cool and bathe with chocolate.
