- Xylitol1/2 cup
- Coconut Flour30 g
- Cocoa powder40 g
- Coconut oil100 g
- Cinnamon1/2 tablespoon
- Honey1 tablespoon
- Yeast1 tablespoon
- Salt1 g
- Whey cream800 g
- Xylitol4 tablespoon
- 70% or semisweet chocolate350 g
- In a food processor or blender, add the eggs, peanuts, half a cup of xylitol, coconut flour, cocoa powder, coconut oil, cinnamon, baking powder and salt, beat until obtaining a smooth and homogeneous mass.
- Bake in 12cm diameter removable bottom molds for 20 min or until golden, and remember not to fill to the top so it doesn't leak, halfway is enough.
- In a pan add the milk cream with whey (it has to be the one from a can) and the Xylitol, stir until golden and set aside.
- Open the cookies, fill them with the dulce de leche, dip them in chocolate and let them dry under a sheet of parchment paper, if it's a very hot day, take it to the fridge to help dry.
