- Coconut oil2 tablespoon
- Xylitol Sweetener3/4 cup
- Coconut milk200 ml
- Finely grated dry coconut without sugar80 g
- White coconut flour4 tablespoon
- Chemical Yeast1 tablespoon
- Coconut milk for topping1 cup
- Sour cream for topping1/3 cup
- Xylitol Sweetener for Topping2 tablespoon
- Grated unsweetened coconut (can be fresh)1 tablespoon
- Mix the eggs, coconut oil, xylitol, milk and beat until homogenized.
- In a bowl add the grated coconut and liquids and mix again until smooth. Add the coconut flour and mix.
- Add the yeast and mix again.
- Bake in a preheated oven at 180°C until golden, about 30 minutes.
- In a microwave-safe pan or bowl, add the syrup ingredients. Cook in the microwave for 2 to 4 minutes or on the stovetop for 10 minutes.
- Remove the cake, make the cuts and add the syrup over it. Sprinkle with grated coconut and let it cool before consuming.
