- Braised Escarole300 g
- Ricotta50 g
- Eggs5 unit(s)
- Light cream2 tablespoon
- Light cottage cheese2 tablespoon
- cherry tomato4 unit(s)
- Baking powder1 dessert spoon
- Mozzarella or grated parmesan to taste
- Salt to taste
- Pepper to taste
- In a refractory spread the endive, ricotta, tomatoes, and curd.
- Beat the eggs with the cream, salt, pepper and yeast.
- Toss over the escarole. Top with mozzarella or grated parmesan.
- Bake in preheated oven for about 30 minutes, or until golden.
