- Dijon Mustard1 tablespoon
- Sunflower oil150 ml
- Olive oil50 ml
- Lemon juice1/2 unit(s)
- Sweet paprika1 coffee spoon
- Smoked paprika1 teaspoon
- Spicy paprika1 coffee spoon
- In a bowl add the yolks and mustard and mix with a whisk.
- Add the oil in a thin stream, stirring constantly with the fouet, until it emulsifies and becomes very thick. After it is already "assembled" you can thicken the wire.
- Add the olive oil, lemon juice, a generous pinch of salt and the paprika. Mix until smooth. Taste and adjust the salt.
