- Honey to sweeten to taste
- Cut the rind into large pieces and transfer to a medium saucepan.
- Cover the shells with water and place over high heat. As soon as it boils, reduce the heat to medium and let it cook for 40 minutes, with the lid ajar.
- Turn off the heat and add the mint bags. Cover the pan and let it infuse for 5 minutes. Strain the tea and sweeten with honey to taste. Transfer to a kettle and serve immediately.
