- large eggplant1 unit(s)
- large chopped tomato1 unit(s)
- finely chopped onion1 unit(s)
- minced garlic1 unit(s)
- Mozzarella slices to taste
- salt to taste
- oregano to taste
- parsley to taste
- olive oil to taste
- Cut the eggplants into slices of about 2cm. Place in a basin with water and salt and leave for about 10 minutes. Drain and dry well with paper towels.
- On a baking tray lined with baking paper, place the slices and season with salt, black pepper and olive oil. Place in the oven for about 20 minutes or until cooked. Remove from the oven.
- Make a sauce with the tomato, onion, garlic, parsley, salt, black pepper, basil. Spread over the eggplant slices.
- Place 1 small spoonful of ricotta cream on each one and on top a slice of mozzarella (I used buffalo). Sprinkle oregano.
- Bake for another 15 minutes or until the mozzarella melts. Ready, now just taste it!
