- Coconut oil1/3 cup
- Flour2 cup
- Vanilla flavored whey protein1/2 cup
- Baking powder1 tablespoon
- Cut the carrot into slices
- Blend the carrots, eggs, oil and whey protein in a blender until smooth
- In a bowl, sift the flour and baking powder.
- Mix the liquid and dry ingredients together and stir gently until smooth.
- Grease a loaf pan with a little butter and flour
- Pre heat the oven to 170 degrees
- Bake the cake for about 40 minutes or until a toothpick comes out clean.
