- Cottage cheese200 g
- Egg1 unit(s)
- Cherry Tomato10 unit(s)
- Grated Parmesan4 tablespoon
- Chives to taste
- Olive oil to taste
- Salt and Black Pepper to taste
- Cut the eggplant lengthways and soak in salted water for 30 minutes.
- Beat an egg and mix with the cottage cheese, and season with salt and chives.
- Remove the eggplant from the water and make transverse cuts in each slice.
- Place the eggplant slices in a refractory brushed with oil, season with salt, black pepper and more oil. Place in the oven for 30 minutes.
- Remove the eggplant from the oven, and cover with the cottage mixture. Place the cherry tomatoes cut in half. Finally, sprinkle with Parmesan.
- Bake in the oven for another 30 minutes and then serve.
