- Cooked Quinoa3 cup
- Cabotia squash5 cup
- Chopped Onion2 cup
- Minced garlic2 tablespoon
- Olive oil, salt and pepper to taste
- Mint1 cup
- Lemon juice1/2 cup
- 1. Saute the onion and garlic in olive oil, add the pumpkin, salt and set aside.
- Blend the mint leaves with the lemon in a blender and set aside.
- In a bowl, combine the cooked quinoa, sauteed pumpkin, mint and lemon. Put it in a shape and take it to bake in medium oven for approximately 30 minutes.
