- Pupunha heart of palm500 g
- Leek50 g
- Yam200 g
- Olive oil1 tablespoon
- Sea salt to taste
- Black pepper to taste
- Water300 ml
- Saute the leek in olive oil until wilted. Add the diced peach palm and sauté for a few more minutes. Add the yam cut into cubes, add the water and cook until soft.
- Transfer to a blender and blend well. Add more water if necessary.
- Return the cream to the pan, let it boil to reduce and add seasonings to taste. I used 1 tbsp of salt and black pepper.
- Serve with herbs to taste, a drizzle of olive oil, sesame seeds and sliced almonds.
